Lemon Rosemary Chicken

 Good morning dear friends!

The sun is shining and finally, it promises to be a beautiful day!  Time to get the lawn mowed and pick the rest of the produce and put the garden to bed for the winter.  I'll be using some of my old cornstalks for Fall decorating as well.

There is nothing like a warm, yummy meal in the cool of Fall, and this one is one of our favorites.....

LEMON ROSEMARY CHICKEN

This is such an easy meal to throw together...whether you are just staying at home, planning a little dinner with friends, or a large family get-together, this meal is such to please and impress!

Here is what you will need 


 


(Of course, proportions are dependent on how many people you wish to feed, but for 4 servings, this is a good guideline)

*One chicken, skin on and cut up (breast, legs, wings, thighs)

*Olive oil

*2 sweet onions, sliced thinly 

*4-5 large lemons

*Several sprigs of fresh rosemary, chopped (you can use dried - 2 T- but fresh is so much better)

Salt & Pepper

Rinse chicken pieces and place in a 9 x 13 pan or large, with sides (don't crowd the pieces).  Spread onion slices around the pan.




Remove leaves from stems and finely chop the rosemary.

Drizzle chicken and onions with a generous amount of olive oil, and sprinkle with the salt, pepper and rosemary. Toss until all the chicken and onions are well coated with oil and herbs.

 


Now, juice one or two of your lemons and pour over the chicken.  Next slice a couple of the lemons thinly and place over the chicken pieces.

Place in 400 degree oven and bake, covered with foil, for one hour, basting with the juices occasionally.  Remove foil, and add a few more lemon slices, continue baking for another 1/2 hour and serve over white rice, spooning on some of the pan juices...oh so yummy.  

The onions caramelize and add so much to the dish, so don't skimp on them.  It may seem like a lot when you are prepping the dish, but they are delicious.  Add more or less lemon to your taste.  We love lemon and rosemary, so I tend to add quite a bit.
