It's that time of year again! Zucchini is coming out of our gardens faster than we can eat it! If you are tired of the same old ways to fix it, give this recipe a try!
Grilled zucchini with Herb Butter
2 medium zucchini halved lengthwise.
Heat a grill or grill pan over medium -high heat. Coat pan with cooking spray. Add zucchini and cook 4-5 minutes on each side.
Place 2 1/2 teaspoon olive oil and 2
teaspoons unsalted butter in a microwave-safe bowl. Microwave at HIGH
for 20 seconds or until butter melts. Stir in 1 tablespoon chopped
fresh flat leaf parsley, 1 tablespoon chopped fresh chives, 1 tablespoon
chopped fresh basil, 1 tablespoon fresh lemon juice, kosher salt and
black pepper.
Drizzle butter mixture evenly over zucchini, top with freshly grated parmesan or romano cheese.

Hello my friend... I love this photo!! And too too funny.... I puzzled when I first looked at it and thought "Hmmm....either it's zucchini season...or they were being unruly...then I read your title. Very clever.... And it looks like hubby (I presume) was accompanied by his faithful (and BEAUTIFUL!) hunting kitty LOL. Love it. I would love to take one or two of those off your hands.... I love zucchini bread and have a few new recipes I want to try, but all I find in the store are the small stir fry kind. I'm doing to have to try to track down a farmer's market somewhere..... ~Robin~
