It's another snowy day here in the Finger Lakes. What's it doing in your neck of the woods?
For today's tutorial, I am sending you to another site, with a easy and inexpensive craft idea for the kids. Red trucks have been all the rage for a couple years now, and these quick and easy ornaments, with your kiddo's photo inside, will be fun to create during those covid boredom hours.
So click HERE to learn how.
As a side note, you can purchase little mini Christmas trees at Walmart and craft stores, rather than creating your own, to make the project go even quicker.
Does your family prefer a little something sweet on Christmas? I love this Swedish Coffee Ring. I received this recipe at my bridal shower (ohhhh so many years ago) and still make it now and then. I tend to make my own bread dough now, but the original recipe calls for hot roll mix.
Swedish Coffee Ring
It is
relatively easy and the coconut adds a nice dimension to the flavor of
the coffee ring....a step above your ordinary cinnamon rolls.
Ingredients
1 package of hot roll mix (or make your own dough)
1/2 cup sugar
*********
1/4 cup butter, at room temp
*********
1/2 cup of brown sugar
3/4 cup coconut, chopped in a food processor until finely chopped
1 teaspoon cinnamon
********
confectioner's sugar
milk
1/4 cup chopped pecans, optional
Prepare the hot roll mix according to the box direction, but add the 1/2
cup of sugar to the dry ingredients before mixing, to add sweetness to
the dough. If you love making homemade dough, you can substitute your
own recipe for the dough, and then proceed with the remaining steps.
Turn out onto a floured counter and knead until smooth. Immediately roll the dough into a rectangle, approximately 8 x 12.
Spread the softened butter over the entire dough.
In a separate bowl, mix together the brown sugar, finely chopped coconut
and cinnamon until well blended. Sprinkle this mixture over the
buttered dough.
Starting on the long end of the dough, start rolling it up. You need to
have the entire 12" length in order to make your ring shape, so don't
roll from the short end. Roll up the entire dough as tightly as
possible. Seal the edges with water so that they will stick together.
Place on parchment paper and form a large circle with the dough, also
sealing the edges where it meets with water. Try to overlap the edges
so it doesn't fall apart. Slide the parchment paper and dough onto a
large cookie sheet.
Take your kitchen shears or a sharp knife and cut the outside edges of
the dough circle, about every one inch or so, and about halfway through
the dough. Twist the cut edges upward to expose the swirled insides,
laying them on top of each other slightly.
Cover with plastic wrap and let rise in a warm place for about an hour
or so....just enough time to unwrap a few presents while you are
waiting.
Bake your coffee ring at 375 degrees for about 25 minutes.
Remove coffee ring from cookie sheet to serving platter. Let cool for
15 minutes and then make a quick icing with confectioner's sugar and a
little milk. Drizzle over the coffee ring and sprinkle with chopped
pecans, if desired.
Serve to your hungry family this joyous Christmas morn!
If you would like me to share my Egg Bread recipe that I use for this, comment below, and I will share it tomorrow!

ReplyDeleteFun projects to do for Christmas, I do like the Santa and the tree idea. Hopefully I can find time to try both to display together. I am trying to get things done this week so I can relax and enjoy the holidays, making a few new things for fun.
