Day 9 - Twelve Days of Christmas Celebration & Giveaway

Good morning everyone!

I hope you had a fun weekend.  Ours was jammed packed with activity, and I'm actually glad for a Monday...to pick up and re-coop!  Saturday the whole family went antiquing for my birthday.  We started this tradition a few years ago and really enjoy it.  We poke around, buy a few interesting things and then go out to dinner on the way home.  Yesterday was spent going to Mass, shopping and then our normal 'football' Sundays over at our oldest son's house...oh gosh...we all ate too much!!!

Today is Day 9 of my
Twelve Days of Christmas Celebration & Giveaway!

Christmas is almost upon us!  I need to finish shopping and make up some goodies baskets for the neighbors.  One of the things I have prepared to add to their gifts are these beautiful and EASY mint cookies.  Try some today.

White Chocolate Mint Cookies
 

Here's what you will need:

  • a box of Nabisco Famous Wafer cookies
  • 12 oz white bark coating
  • 1/4 tsp peppermint extract
  • about 4-5 peppermint candy canes, crushed
(oops...forgot to place the peppermint extract bottle in my picture)
Directions:

Crush your candy canes and set aside in a small bowl.  Place several pieces of waxed paper or parchment paper onto your counter.
 
Place your white back coating squares into a microwave glass bowl.  Heat and melt according to package instructions.  My package also had directions of a double-boiler method, so go ahead and use that if you are more comfortable with it.
 Once your chocolate is melted, carefully place on chocolate cookie into the melted candy.  Use a fork to gently flip it over to coat both sides.  Place the fork under the cookie and gently lift it out of the melted candy, allowing it to drip for a minute, then place on wax paper and immediately sprinkle with your crushed candy cane.

Allow your cookies to cool completely.

Yes, it is THAT simple...and they are oh so festive.  The contrast of the white and dark with a sprinkling of the red peppermint candy looks so pretty.

Layer them carefully into a decorative tin, with wax paper between the layers and you have a beautiful gift to give.  But of course, be sure to save some for yourself, because they are as tasty as they are pretty!

 I think tomorrow I will post a picture of the giveaway item, since my Celebration is winding down.  It is going to be a winter item, rather than Christmas related, so that you can enjoy it for the rest of the colder months.

  5. No....unless you call a space heater that my husband bought for the sunroom where the cat sleeps a present. He thinks it gets too cold out there for her...

  6. Those cookies look delicious. Of course I buy my fur babies, presents, lol. I have a new puppy so I got him a larger outdoor ball a frisbee since he loves to play catch and chase things.

  10. Those cookies do look delicious. We have always bought a treat for our pets. I especially like that there are special red and green toys for the pets now too.

  11. We used to get presents for our dogs since they played with toys and ate dog treats. Our cat is thrilled just having a tree to hide under!

  13. White chocolate and peppermint- 2 of my favorites. I currently have no pets, but as a child we always got our dog and cat Christmas pet stockings full of toys and such :)
