Do you know the Muffin Man...the Muffin Man...the Muffin Man???

Well....even if you don't happen to know the 
Muffin Man....you can still whip up these 

DELICIOUS 
PUMPKIN SPICE MUFFINS

Remember the dish towel I got in my  Pin Keep swap with Heather....well....Sunday I made the Pumpkin Spice Muffin recipe that was printed on the towel and everyone raved about the results, so I thought I should share them with you.

Pumpkin Spice Muffins


1 cup pumpkin puree 
1 cup sugar
1/3 cup vegetable oil
2 eggs
1 t. cinnamon*
1/2 t. ground nutmeg*
1/4 t. ground cloves*
1/4 t. allspice*
1/8 t. ground ginger*
*(note here - I didn't have allspice, so I just decided to omit all of the spices and use 2 t of Pumpkin pie Spice instead)
1 1/2 cups flour
1 t. baking powder
1 t. baking soda

Mix the wet ingredients first, then add the dry ingredients to the wet, stir until well combined.

Topping

1/4 cup brown sugar
1/2 t. cinnamon
1/4 cup flour
2 T butter, softened

Cut softened butter into dry ingredients until crumbly.  Sprinkle this mixture on top of muffins before baking.

Bake at 350 degrees for 20 minutes or until toothpick inserted in middle comes out clean.

  3. Mmmm, I was going to bake pumpkin bars tomorrow but the recipe doesn't use the whole can so maybe I'll make a batch of these too!

  4. Oh my, those muffins sound so good!! I wish I could get pumpkin pie spice here in Australia, but it is something I have never found. Not sure what I could use as a substitute. I could leave out that spice, and I'm sure the muffins would still be good, but wouldn't be the same for sure.

  6. I will share my apple dip, a fall favorite and so easy.
    1 stick of butter softened,
    1 8oz. block of cream cheese softened
    1 tsp. vanilla
    3/4 cup brown sugar, mix together well, chill and serve with apples.
