12 Days of Christmas Share-a-thon
Today I'm sharing a recipe that we make every year for the holidays.  It's quick, easy and elegant, and oh so tasty...and contains no grasshoppers, which can be very hard to find this time of year - hehe

Grasshopper Pie

STEP 1

16 chocolate wafer cookies or 12 Oreo cookies (middles included)-use a food processor to chop finely
(You can also use the prepackaged Oreo cookie crust mix)

4 T butter or margarine, melted

Mix the above ingredients and press into a buttered pie plate, working it up the sides and pressing firmly. Refrigerate while you prepare the filling.

STEP 2

In mixing bowl, beat 1 cup of heavy cream until light and fluffy...set in refrigerator for later.

STEP 3

In medium saucepan, heat 

3/4 cup milk

Once the milk is heated, but not boiling,

add 24 large FRESH OR 8 oz of FRESH mini-marshmallows

Stir constantly until the marshmallows are melted.  Remove from heat and stir in

1/4 cup Creme de Menthe liqueur
2 T Creme de Cacao liqueur
 2-3 drops of green food coloring
Let this mixture cool for 10-15 minutes...you don't want it hot.  Once cooled, FOLD in the whipped cream carefully.  Keep folding until it is fully incorporated, but do not stir.

Pour into prepared pie crust and place in the freezer.  Chill in the freezer for at least 3 hours before serving.  You can sprinkle the top with extra cookie crumbs, shaved chocolate, mini chocolate chips or chocolate sprinkles.  Don't forget to serve with additional whipped cream on top.


**I do have an additional note about the Feather Tree tutorial I shared on Day 1 - it appears that the instructions are not easily viewed, so I am working on a new set and will have them posted here as soon as possible....sorry for the trouble many of you have had viewing them.**
