I hope some of you had an opportunity to try my homemade ice cream recipe from last month...it was certainly tasty.
To add a little childish fun to the mix, I've decided to feature my
COOKIE MONSTER ICE CREAM
this month.
As with last month's recipe, this one is sure to please both young and old, with it's creamy texture, bits of cookies and fun color, it will be a hit for sure.
The directions are much the same as my last recipe, and it's really simple, so get out that ice cream maker and join me in some Scrumptious Summertime fun.
COOKIE MONSTER ICE CREAM
Here's what you will need:
2 c. heavy whipping cream
2 c. half and half
1 c. of sugar
2-3 t vanilla extract
Royal blue paste icing color (you can find this at Walmart, AC Moore, etc.)
Store bought chocolate chip cookies AND oreo type cookies, broken up.
In a large bowl, whisk all the ingredients together EXCEPT the cookie bits. Mix until sugar is dissolved.
Place this mixture into your ice cream maker and churn according to your machines directions.
When the ice cream is finished and it looks a bit thicker than soft-serve ice cream, turn off your machine and stir in the cookie bits.
Stir just until combined and quickly transfer to your freezer container.
Now comes the hardest part....waiting for it to freeze.
Wait at least 8 hours, then dip in and enjoy!
Oh..this ice cream isn't just for kids - it's so tasty you'll want more...and without all the yucky stuff they put into store bought ice cream, you can feel pretty darn good about having a second helping.
See you next month for another great recipe - this one will be more grown up!
Have fun and enjoy!
Wendy, this is just wonderful, I have to try it for sure. Thanks for sharing, hugs, Lecia
